Hi, I’m Lindy, the face behind Ruby-Tuesdays Biscuit Studio.
I started baking 14 years ago, when I saw a cake on the cover of a book and decided I wanted to make it for my 21st birthday. After that, cake orders from friends and family started rolling in.
During the lockdown in 2020, my daughter and I would bake biscuits, and I would ice them white for her to paint with food colouring. From there, Ruby-Tuesdays was born, and I have been using Flavour Nation in my cookies and cakes since just after lockdown.
My favourite go-to flavour is English Toffee and/or Honey.
I’m a self-taught baker, and now give classes to those wanting to learn how to decorate cookies.
